Across the metro
The densest concentration of kitchens sits in Columbus itself, across Downtown, the Short North and the blocks around campus. German Village and many downtown storefronts date to the 1800s, and the North Market alone holds around 35 food vendors under one roof. Small indoor traps in older buildings here often need frequent grease trap cleaning.
Suburban shopping corridors tell a different story. Chain restaurants and strip centers in Dublin, Westerville, Hilliard and Gahanna more often have outdoor interceptors that need grease interceptor pumping on a set schedule. Easton Town Center opened in 1999, Polaris Fashion Place in 2001 and Bridge Park in Dublin began construction in 2016, and current Columbus code requires each new interceptor to serve only one food service operation.
On the south and east sides, Grove City and Reynoldsburg combine older town centers with big retail corridors along Stringtown Road and Brice Road. Large restaurants and older shopping centers there often run in-ground tanks that call for grease interceptor cleaning as well as pumping.
Farther out, the rules change. Powell and Lewis Center are served by the Delaware County Regional Sewer District, which requires interceptors to be pumped at least every 90 days, while county seats such as Delaware, Lancaster, Marysville, London and Circleville run their own sewer utilities. Each area page names the authority that applies there.
